Flowering almond trees in Provence
The almond tree is the first tree to flower in the year. It figures, alongside the olive and pistachio trees, as an emblematic tree around the Mediterranean where it has been cultivated for a long time. Symbols of love and virginity, the almond blossoms herald Spring, so he adorns himself with a white dress, even before the leaves appear.
Proliferating Tree
During the 3 weeks of flowering, the beekeepers transhume their hives within the orchards so that the bees promote pollination and fruiting.
Tree belonging to the Rosaceae family like the apricot tree, the plum tree, the cherry tree, the cherry tree or even the peach tree, the “Prunus dulcis”, scientific name of the almond tree, appreciates poor, calcareous and draining soils. It is therefore perfectly adapted to the Provençal terroir, where it is considered one of the inseparable symbols of our landscapes.
In almond orchards, you can harvest “fresh almonds” in summer, a fruit whose “gove” (the fleshy part surrounding the shell) is soft green and the inside is still milky white. . In autumn, it is the sweet and dry almond that is sought after, a noble raw material that can be found in particular in our famous Calisson d’Aix and our Nougats de Provence.

The fruit of our labor x La confiserie Leblanc
We trust Frédéric Leblanc, a former agricultural engineer, for the development and manufacture of products with character such as our succulent almond cream. The confectionery, created in 2008, is located in Banon, backed by the Contadour plateau, between the mountains of Lure and Ventoux, in the heart of this Haute-Provence of which Jean Giono and Lucien Jacques were the poets.
Almond cream
Did you know ? If the production of almonds in France is limited to around 500 tonnes per year – leaving the USA to take first place on the podium – their quality is the joy of confectioners and chocolatiers!
They are mainly produced in the South of France and in Corsica.
Pairings: this almond cream is eaten on its own but is also the basis of several desserts in Provence such as fruit tarts, frangipanes…
Let yourself be tempted by its taste richness!
