Domaine Salvator

Founded in 1902, Domaine Salvator is one of the oldest olive oil estates in Haute-Provence. It is here that the Pinatel family, olive growers and millers since 1902, perpetuate this tradition on their land. After 4 generations of farmers, Sophie and Frédéric Pinatel now run the family business. The Salvator estate produces artisanal extra virgin olive oils. Gold medal winners every year since 2011, Sophie and Frédéric offer olive oils that combine tradition and modernity, with typical Provencal varieties (Aglandau, Bouteillans, Picholines, Tanches…) that express their authentic character.

Domaine Salvator's fruity range

The olive harvest runs from October to November on this estate. Domaine Salvator offers two fruity olive varieties.

 

The first, “fruité vert”, is harvested in October. The olives are still green and not yet fully ripe, so they are pressed very quickly, usually within 24 hours. This results in very herbaceous, fiery olive oils, with vegetal notes such as fresh herbs and artichoke.

 

The second is “fruité d’olives maturés”: the olives are picked just after the first harvest of fruité vert, but are not pressed immediately. They are stored for several days under controlled conditions (i.e. without contact with the air to avoid oxidation), resulting in even sweeter olive oils with notes of cocoa, mushrooms and black tapenade.

This last fruity note is truly typical of the Provencal terroir.

New: smoked organic olive oil

Smoked organic olive oil is produced from PDO Provence extra virgin olive oil. Subjected to a delicate smoking process, the olive oil is cold-processed at temperatures below 20°C, using beech bark and olive stones. This exceptional process gives the oil its toasty, woody aromas.
