In a bowl, sift the ground almonds, sugar and flour.
Form a well in the center, add the egg white and the orange blossom.
Mix with a wooden spoon.
Preheat the oven to 170°C
Line baking sheets with parchment paper.
Take a little dough, roll it between your hands in the shape of a small sausage and then give it a crescent shape. Place it on the plate. Do this with the rest of the dough.
Brush each croissant with egg white, sprinkle with pine nuts.
Brush again with egg white.
Cook for 10 minutes. Remove from the oven, let cool on the baking sheet for 5 minutes, then on a wire rack.
