Lemon, olive oil & mustard marinade with Provence herbs

  • juice of one lemon
  • 1 tbsp. chopped fresh parsley
  • 1 small garlic clove, grated or pressed (optional)
  • Black pepper
  • Lemon zest (optional, but boosts fragrance!)

Preparation

    Mix all ingredients in a small bowl.

    Add the salmon cubes and toss gently to coat well.

  3. 3

    Leave to cool for 20-30 minutes.

    Thread vegetables (zucchinis, onions, cherry tomatoes, etc.) onto skewers.

    Cook a la plancha, on the barbecue or in the oven at 200°C for 10 to 12 minutes.

    No need to salt before cooking: salmon is naturally salty, and mustard already adds flavor.

    Serve with fragrant rice, fennel salad, or roasted potatoes with lemon & rosemary.
