Dyade olive oil: a harvest in two times!

The richness of the land

It is not far from the city of Arles, emblematic land of the Camargue, that the Domaine Les Bastidettes is located. André Meiffre and Guillaume Meiffre, his son, have been at the helm of this farm since 1996, distinguishing themselves not only by the quality of their production but also by their human dimension.

 

If the two olive growers cultivate a little more than 70 ha of land, where the olive trees flourish, they attach a particular interest to the link created between Man and nature.

Aware of the open-mindedness and curiosity that drive André and Guillaume, Olivier Baussan offers them, on the same variety of olive, to practice a harvest in two stages, thus the Dyad was born!

La Dyade is first of all the story of a new and very rare variety of olive: the Sikitita, the fruit of the crossing of the Picual and Arbequina varieties.

This variety enjoys early ripening. It is distinguished by its ovoid and symmetrical shape and the absence of a nipple. Its singular scent of fresh grass and green fruits is released by the oil extracted from it.

 

On the palate, it is sweet with a slight peppery progression and a vegetal flavor.

 

It is in mid-October that the first harvest takes place, making it possible to obtain an oil with a fruity green, herbaceous and emerald color.
The second harvest, mid-November, will bring a rounder oil, with more marked and ripe flavors.

 

A Dyad harvest allows a single fruit to taste colorful flavors, depending on whether the harvest takes place early or later. The climate, the nature of the soil, the variety of the fruit allow a singular alchemy and to discover an equally exceptional oil.

FIRST HARVEST – October 2022

Tasting notes: a green fruitiness with notes of sweet almond, apple, artichoke and avocado, very pleasant and delicate on the nose.

On the palate: this olive oil is sweet at first, very almondy which ends with a slight astringency and an ardor with notes of green banana peel.
Food pairings: endive salad with blue cheese & walnuts, in cold soups such as gazpacho, vegetable stew, pan-fried white or green beans, with semi-hard cheeses (gouda, blue cheese).

 

SECOND HARVEST – November 2022

Tasting notes: a ripe fruitiness with delicious notes of red fruits, dried fruits, almonds and hay.
On the palate: unctuous and soft, without any bitterness with notes of red fruits such as strawberry. In the end, the olive oil turns out to be slightly fiery.
Gourmet pairings: white meats, fish & seafood, as a final touch with steamed vegetables (asparagus, turnips, potatoes). As a dessert in yogurt, ice cream and tart.
