Peel and cut your potatoes into large pieces. Rinse them then cook them in salted boiling water for about 20 minutes.
Once very tender, drain them then mash them with a fork with the hot salted and peppered milk.
Peel and chop the garlic. Brown it for 1 minute in olive oil. Add the olive oil to the potatoes, mix with a fork and serve.
Mix your liquid cream with your Parmesan cream in a saucepan over medium heat, pepper and salt lightly.
FCook your beef tab over medium heat on both sides. At the same time, brown the chanterelles with parsley and olive oil.
Arrange your plate, place the meat, your mashed potatoes, a few slices of truffles on top and pour the truffle sauce.
