Preheat your oven to 356°F.
Peel the red onions and slice them thinly. Cut the goat cheese log into rounds.
Roll out the puff pastry in a baking pan or on a baking sheet lined with parchment paper. Prick it with a fork.
Spread the fig jam over the bottom of the tart. Then spread the sliced onions over the top, followed by the goat cheese rounds.
Sprinkle with thyme, salt, pepper, then drizzle with olive oil.
Bake for about 25 minutes, until the dough is golden brown.
Serve hot, accompanied by a mixed salad. Bon appétit!
