The caramel factory of Mane

Located in the village of Mane in Provence, the “Caramelerie” is an artisanal factory, established in an 18th century Provençal bastide, which was a “magnanerie” (from the Occitan magnan, which designates the silkworm of the mulberry bombyx), a place of exploitation of traditional sericulture, that is to say the breeding of the silkworm.

A TRIP TO THE 1950s

The manufacture of caramels is totally artisanal. The production workshop, visible behind a large bay window and accessible by a footbridge, offers visitors a dive into the history of the manufactures of the 1950s.

The craftsman passes his cooking through a cauldron in a succession of old machines made in France in the Ateliers Ratti. They will first roll the preparation, then pass it over a sugar spinner to shape it into a soft continuous square caramel, then cut into small cubes and wrapped one by one in golden foil.

Olive oil caramels

Ici, la couleur est de mise : à l’image des courbes provençales, des teintes solaires ont été choisies pour distinguer les écrins où reposent les caramels.….
