Place the chicken breasts on a work surface or between 2 leaves of parchment paper and flatten them with your hand.
Prepare the marinade with the juice and zest of the citrus fruit, olive oil, a little salt and the spice mix.
Pour over the chicken and leave to marinate at least 1 hour or even a day in the fridge.
In a frying pan heat the olive oil, strain the chicken and cook over high heat with the shallots, 3 minutes on each side.
Remove and put aside before pouring the marinade into the frying pan to reduce, scaping the juice of the chicken and mixing well.
When the marinade has thickened, put the chicken back in the frying pan to heat it and serve immediately with the side salad well mixed and a pinch of spices.
