Preheat oven to 220°C.
Mix the egg with the sugar until the mixture whitens.
Add the almond milk and honey (warmed to incorporate well).
Stir in the flour and baking powder.
Finally, add the melted butter.
Leave the dough to rest for 15 minutes.
Bake for 5 minutes at 220°C, then turn down to 200°C for a further 5 minutes. Keep an eye on the baking!
Chef's tip: add a pinch of fleur de sel or citrus zest if you like subtle contrasts. Honey softens, so it's up to you to strike the right balance.
