Melon soup with Pastis

  • 1,5 Melon (about 1 kg each)
  • 1 lemon
  • 2.5 tablespoons Pastis
  • 300 g Semi-dry goat cheese

Preparation

    Cut the melons in half. Take out the seeds. Scoop out the flesh with a tablespoon. Mix it with the lemon juice and the pastis. Refrigerate 2 hours.

    At the last moment, pour the very cold soup into glasses.

    Spread thin slices of goat cheese. Sprinkle with a drizzle of honey and pepper mill.
