Melt-in-the mouth aubergines with spices & fresh sauce




Ingredients for the sauce

  • 2 greek yoghurts
  • 1 lime ( zest and juice)
  • 1/2 bunch parsley washed, tapped dry and leaves chopped
  • 1/2 bunch coriander washed, tapped dry and chopped
  • 1 spring onion or chives, chopped

    Wash the aubergines, cut in half lengthwise and score the flesh with the point of a knife. Sprinkle with salt, Sirocco spice mix and brush with oil.

    Place the aubergines flesh side down on parchment paper and bake in the oven at 200° with a little water.

    After 15 minutes, turn the vegetables over, brush with a little more olive oil and leave to bake for another 15 minutes (time may vary according to the size of the aubergines; it is important that the aubergines should be soft but the flesh firm).

    Prepare the sauce by mixing all the ingredients.

    Serve the aubergines hot or cold with the sauce.
