Soft cookies with olive oil & lemon




Others ingredients

  • 1 lemon for the zest
  • 5 cl lemon juice
  • 1 egg
  • 100 g Granulated sugar
  • 190 g flour
  • 1/2 bag baking powder
  • 1 pinch salt

    Preheat your oven to 180°C. Zest the lemon and squeeze it. In a bowl beat the egg and sugar until pale. Add lemon juice, zest and olive oil. Mix well.

    In another bowl mix the flour with the baking powder and the salt. Slowly pour the flour into the lemon mixture and mix well to avoid lumps. The dough is soft but that's normal.

    On a baking sheet covered with baking paper, using a pastry bag or a small spoon, form balls the size of a walnut, space them well so that the cookies do not stick together during cooking because in the heat they will spread a little. Sprinkle with icing sugar.

    Bake 8 minutes to 10 minutes. They should not brown. Leave to cool on the baking sheet then peel off the biscuits gently with a spatula.
