The olive oil "brioche" is a traditional Provençal dessert served during the big supper, the Christmas Eve meal. It is also customary to offer it during family visits to wish the New Year. At the origin of the name and the recipe, in the olive oil mills of Provence, at the end of the process, wheat flour was used to pump out the residual oil.
