  • 10 green asparagus (choose thin, fresh asparagus)
  • ½ lemon (zest and juice)
  • 20 g roasted and crushed hazelnuts
  • 20 g shaved parmesan
  • Fleur de sel, freshly ground pepper
  • ½ tsp. honey (optional, to balance bitterness)

Preparation

Preparing the asparagus

    Cut off the hard base of the asparagus and cook for about 8 minutes in boiling water.

Season

    Drizzle olive oil over asparagus, add a pinch of fleur de sel and pepper. Toss gently to coat well.

Dressage

  1. 1

    Drizzle with lemon juice and, if desired, a little honey. Sprinkle with roasted hazelnuts and Parmesan shavings.
