Preparing the asparagus
Cut off the hard base of the asparagus and cook for about 8 minutes in boiling water.
Season
Drizzle olive oil over asparagus, add a pinch of fleur de sel and pepper. Toss gently to coat well.
Dressage
Drizzle with lemon juice and, if desired, a little honey. Sprinkle with roasted hazelnuts and Parmesan shavings.
