For the bread dough

  • 1 bag dry baker's yeast
  • 300 g organic flour T80
  • 1 teaspoon salt
  • 1 tbsp oregano
  • pepper

    Prepare the dough: in a bowl, mix the yeast with 17 cl of water at room temperature and leave to rest for 10 minutes. In a salad bowl or in the bowl of a robot, pour the flour, dig a well, add the salt, the oregano and the oil, then pour the diluted yeast. Knead until the dough is smooth, then form a ball. Place it in a lightly oiled bowl and let it rest for 1 hour, covered with a clean cloth.

    Prepare the filling: peel the onions and cut them into thin strips. In a sauté pan, stew the onions over low heat for 30 minutes in the oil with the herbs and maple syrup. Pepper in the mill.

    Preheat the oven to 200°/th.6-7. Degas the dough and roll it out with a rolling pin on a sheet of floured parchment paper. Place the sheet on a baking sheet. Cover the dough with the filling, add the anchovies and the olives. Bake 25 mins. Enjoy warm, with a little arugula.
