  • 150 g quinoa
  • 3 handles spinach
  • 1 onion
  • 4 strands basil
  • 3 eggs
  • 1 pinch turmeric
  • 10 g breadcrumbs
  • 2 tablespoons cream cheese
  • 3 tablespoons ricotta
  • 40 g potato starch
  • 1 pinch sesame

Preparation

    Rinse the quinoa with clean water. Bring to the boil in 30cl of water. Cook for 14 minutes, until the water is absorbed. Leave to rest for 10 minutes, covered, off the heat. Fluff the quinoa with a fork and let cool.

    In a salad bowl, roughly chop the spinach. Add the chopped onion, chopped basil sprigs then the cooked quinoa. Also add the breadcrumbs and potato starch. Finally, add the turmeric, sesame, eggs, salt and pepper. Mix everything well by hand.

    With the dough, form pretty pancakes using circles. In an oiled pan, let them cook over medium heat on each side until they are golden brown.
